This cabbage fiesta soup is great comfort food and a delicious soup. This soup is wonderful with the bread in the photo. (See link below for bread recipe) or make some cornbread muffins because they go great, too. We like this soup anytime and I make it often for my family. This soup keeps well refrigerated and is just as good for several days when reheated on the stove or in the microwave.
Cabbage fiesta soup ingredients needed:
Ground beef
Minced garlic
Cabbage
Onion
Diced tomatoes
Tomatoes with green chilis
Water
Cheddar cheese soup
Kidney beans
Frozen cut corn (can use one can, drained)
Green pepper
Black pepper
Salt to taste
This soup is great for any gathering too. You can easily double the recipe and serve this to a lot of people. Simple to throw together and it has a great flavor!

You could easily make many variation so this soup! Make it with ground turkey or ground chicken, add any spices you love like cumin, chili powder and smoked paprika. All soups are super versatile and we love to try new things.
Cabbage Tip: Green and Savoy cabbage is best to use in cooked recipes. Red cabbage is best raw and napa cabbage is best raw or stir fried. Bok choy is good sauteed.

This Crock Pot Cabbage Fiesta Soup is super easy to make and delicious on a cold day!
Servings: 8 servings
- 1 pound ground beef cooked and drained
- 1 teaspoon minced garlic
- 1/2 to 3/4 head cabbage chopped
- 1 small onion cut in rings
- 1 14.5 ounce can diced tomatoes
- 1 10 ounce can tomatoes with green chilis
- 1 cup water
- 1 10 3/4 ounce can cheddar cheese soup(do not dilute)
- 1 15 ounce can kidney beans, drained
- 1 cup frozen cut corn can use one can, drained
- 1 small green pepper chopped
- 1 teaspoon black pepper
- Salt to taste
